I'll Take the Halibut Please....

Ah yes, our favorite fish, the Halibut. We haven't had Halibut since we were in Nova Scotia 5+ years ago due to the high cost. But we are in Maine and the Halibut is in so............

Milk bath, lightly floured, and pan fried is the way to go, It's just wonderful. Add a little white wine with a lemon butter linguine and you are in heaven,

The Atlantic Halibut has become rare and expensive due to the extreme over-fishing of yesterday and the low growth rate of this wonderful fish. These weird looking flat-fish can grow to 600-700 pounds but most taken today are not over 100.
